My goal was to save money and continue to eat well while on the road with the kids. So, I purchased a cooler that requires no ice. It plugs into the auxiliary outlet in the car or a regular outlet in the house. I was so inspired by my new purchase that I bought lots of food for breakfast, lunch and snack on the road. The healthy stuff was packed generally for me, but of course the boys were welcomed to eat it should they choose hummus over toaster pastries. We loaded the car with our ice-less cooler and a crate of items requiring no refrigeration. We pulled out of the driveway, filled up the gas tank, and then headed straight for…a fast food restaurant. The boys wanted to start out their excursion with a sausage biscuit. They actually seemed genuinely disappointed that they won’t be touring NY Harbor for an up-close look at Lady Liberty…so I indulged my little travelers. However, they had to promise to eat what I packed for the next 600 miles.
